Sausages with Fagioli All'uccelletta (Turkey Sausages with Spicy Beans)

Ingredients:
2 tbsp olive oil
8 turkey sausages
5 cloves garlic (peeled & sliced)
1 lb cherry tomatoes (quartered)
red pepper flakes (for heat, optional)
salt & pepper
2 (15 oz) cans cannellini beans (drained & rinsed)
2-4 fresh bay leaves
2 handfuls of fresh flat-leaf parsley (chopped)
Directions:
Heat a large high-sided saute pan over medium-high heat. Add the olive oil to heat. Once hot, add the sausages and brown on all sides. Remove the sausages from the pan to a plate and reserve. Add garlic, and saute until golden brown.
Gently stir in the chopped tomatoes, red pepper flakes, and season with salt and pepper. Lower the flame, and cover the pan with a lid, simmer for 10 minutes, until the tomatoes have broken down and thickened to a sauce-like consistency.
Add the browned sausages, beans, and bay leaves to the thickened tomatoes. Stir well and simmer for another 10 minutes. Add parsley before serving.
Dinner's ready!!

to tell you the truth...
I'm not a foodie. I'm not a cook. I don't even have a specialty. But I want to start trying, for myself, for my friends and family, and most importantly, for my fiance. He's my helper in the kitchen, my taste tester, and the most outstanding man in my life. I am a bride-to-be and hopefully real soon a mom-to-be. It is really important to me to learn how to cook properly and start getting some dishes under my culinary belt. I am Hungarian by blood... so it's extremely necessary to me, as a woman, to be the cook of the household and keep everyone healthy and well-fed.
I love photography and I think it is absolutely important to not only capture moments of your friends and family but also of your food. To anyone who has ever taken a picture of someone or something knows that there is always a good story behind a picture. Pictures speak a thousand words and they bring back memories to remember for a lifetime.
